Because we harvest wild venison our deer are not affected by traditional farming practices. This means that by living wild they are not exposed to chemicals or hormones.

Well for a start, we don’t “hunt” venison. Hunting implies a chase, corner and kill method. Totally counterproductive to our outcomes of quality, ethics and sustainability. Our harvesters are artisans. They deploy their skills to be as unobservable to the deer as possible. This requires a great deal of practiced knowledge and patience. From a telescopic distance they need to observe the animal’s sex and weight, it’s physical demeanor and behaviour, and where it fits into our nightly manifest requirements . Dispatch is then swift and humane with instantaneous unconsciousness and a preservation of the all important blood sugars in the form of glycogen. Glycogen then catalyzes into lactic acid which is the ultimate component to exceptional quality red protein.

With every animal that wasn’t evolved here removed, we create a space for native species, (both plant and animal) to re-occupy that space. We don’t see a short-term paddock of dead feral animals as a success for the locals. We work towards removing the interlopers as a managed resource. Reducing populations and environmental stress by intensive rotational harvesting of mapped regions, everyday, year on year.
